How do I lockout users from a server?

I have a 2000 server that needs some maintenance done. I need to keep it
online to perform all tasks, but I want to keep users from accesing
files/shares on it. How can I keep them out while?

I don't want to delete the shares.

Click on nic icon and disable.
Now you have three choices.

Thanks for your help. The only viable one is to disable the server service.
When I said the server needs to stay online, I ment that I need network
access to other servers and the internet, so unplugging the network cable or
disabling the nic won't work.
