I am putting together resume docs and I want people to be able to type
different things in each section, but I don't want them to be able to change
or add to the styles. How do I keep the styles constant?

If you have Word 2003 or 2007, and everyone who uses your template or
documents also has 2003 or 2007, you can go to the Protect Document task
pane and check the box for "Limit formatting to a selection of styles".
Click the Settings link below that check box and choose which styles you
want to allow. Click the Start Enforcing Protection button, and optionally
supply a password to prevent turning off protection.

I'm not sure what happens if such a protected document is opened in an
earlier version of Word. Some of the other protection types cause earlier
versions to treat the document as completely protected, so it isn't
editable.

Great - this will accomplish what I need. Where do I find that protect
document task pane? I'm searching Word help but am not finding it.

In Word 2003, click Tools > Protect Document; or display any task pane
(for instance, press F1 to open the Help task pane), click the pane's
title bar, and select Protect Document from the menu.

In Word 2007, click the Protect Document button at the right end of
the Review ribbon.
