How do I keep personal emal off the exchange Server?

I've traditionally used Outlook with multiple Pop3 email accounts. I
recently began a consulting engagement and I now have an account on their
Exchange Server. I was suprised to find that ALL of my personal email is now
copied to their Exchange Server! Is there a way for me to use a single
Outlook profile but keep my personal email separate from the business email
for this client? Also, is there a way for me to delete those personal
messages that have been copied to their server?

Move incoming personal messages to a different folder using an account-based
rule.

Please be more specific. It appears that all of my existing folders have
been copied to their server. Do you mean I should use multiple PST files?

You can if you want, but it's not necessary. However, a separate PST for
the personal stuff would be my choice.
