Whenever I open a word document the date changes to the present date; I don't
want the date to change, I want the original date to stay in the document.

Manually enter the date instead of the field code.

The CREATEDATE field inserts the date the document was created and
does not change when documents are reopened.

Press Alt+F9 to display the DATE field. Edit it to say CREATEDATE, then
Alt+F9 to toggle back to the field result and F9 to update the field. If you
use a CREATEDATE field in the template used to create these documents, this
will be automatic.
