I like to use the Outlook contact form as the base from which to send an
email. I would like to keep all emails sent to a contact in the contact's
activity list. How do I do this?

It already is - just takes a long time for the Activities tab to populate
with the list of e-mails you sent to that person.

What version of Outlook are you using?

The Activity list is basically only a search based on that contact. The
search is restricted to the default message store. So as long as you keep
your contacts and messages in the same default mailbox, it should work.
