Since you posted this in the Outlook NG, I'll assume you mean Outlook.
But you need to be more specific about what text you want to highlight.
What is your definition of "existing" text?

Use Word as your editor, and it will be quite easy. If you cannot use
Word for any reason, you will have to copy your text into a HTML editor
such as Frontpage, highlight it, then copy it back into your message
(HTML format only).
