I want to have my text wrap at about 40 characters automatically when I
compose an email in Outlook.

How can I make a default setting so that it works every time I write an email?
I use Word as my email editor.

Version of Outlook? Did you try making the window narrower? That's what
outlook used to determine when to wrap text. Once you send it, the settings
in tools, options, mail format internet format control line length.
