everytime I go to send to a name outlook stops and askswhich address if i
have more than 1 email address or a fax # associated with the contact. How do
i specify once and for all what email address to send to. The pop up is very
time consuming

Use unique display names for each address you've specified in the contact
and use that unique name to address the mail. AutoSuggest could help with
this as well if you send to this address regularly.
