How do I find the time taken to respond to an email?

I want to be able to produce a report that shows the time taken to respond to
emails. Is there an easy way to get this information from outlook.

There's no built-in function for that. You'd have to program the solution
yourself with VBA, or see www.slipstick.com, where you might find an Add-in
for that.

You can use the Journal feature for this. When you use a table view, you can
easily copy the data you want to an Excel file and do your reporting from
there.
Tools-> Options...-> button Journal Options...

Depending on your version of Outlook, you can find the Journal folder in the
folder list or by pressing CTRL+8.
