I have created several new fields (such as Spouse Title) in my contact list.
I don't see these fields when I export it onto an excel spreadsheet. Why and
where did I go wrong?

It's a limitation. A workaround would be to create a view that holds all the
fields that you wish to export. Then simply copy/paste that to Excel.
