I keep getting prompted to turn disable my Out of Office Agent but can never
find it. I have looked in the Out of Office Assistant but there is no
'disable' button. It's getting really frusterating.

For which version of Outlook?
Tools-> Out of Office Assistant is the place to enable/disable it. If your
corporation also provides OWA access to your mailbox, you can also try to
disable it from there. Ask you mail admin to provide the proper access
information if needed.
