I've read the other similar questions, but none addressed the scenario if you
did not create the original meeting yourself. I do not have the option of
ending the meeting today since I did not create the occurrence. Any thoughts?

You'll need to export the calendar to excel, delete the other appointments
from the export and the recurring one from outlook then import the formerly
recurring appointment from excel.
