after creating several user defined form fields and puting them into a custom
form, i would like to be able to delete one or two of these fields. Anyone
know how?

The Delete button is on the All Fields page.

my "delete" button on the fields pages is greyed out for all fields except
for my "user defined" fields. When I created the form and saved it into my
personal forms folder the form's fields were added to the field list just
like the "contact" fields or "task" etc. fields appear.

That's normal, expected behavior. You can only delete fields that you created, i.e. the user-defined fields.
