I would really appreciate someone's help. I attached a scanned document to an
email and it's really struggling and trying to send. I would love to just
delete it, but it won't let me ... it says I can't delete it or open it
because it's already begun transmission.

As posted here fairly often:
Click File and check Work Offline. Close and then restart Outlook. Delete
the message. Click File and uncheck Work Offline.

If that doesn't work, try this:

Dear Gordon ... I want to thank you so much for taking the time and care to
reply. I am such a Luddite. And the reason I'm thanking you in advance of
following your tips is because I may never find this site again!! Greetings
from Melbourne.

Hello again Gordon. Just wanted to let you know how I got on! The first link
didn't work! Went to your second suggestion and followed the 9-step
cure-all-ills options but got stuck on the 2nd instruction as there wasn't an
open "email accounts dialog" on the Tools menu! Was just about to dissolve
into a puddle of tears but instead went and poured a glass of wine and
returned to the task. I miraculously created another personal folder, and off
line, was able to move it to this new folder! and delete it! Thanks again.
