How do I customize an ADDRESS BLOCK in MS word?

I am reading through a book that says you can customize how an address
MERGE block is going to look, but using Word 2003, I can't seem to
find a way of changing which fields are within the address block...any
ideas?

Don't use the Address Block. Just insert the merge fields that you want to
use in the configuration that you want them.
