How do I create a new shortcut in Outlook 2003?

We've set up a Signature menu button on the Outlook 2003 Toolbar, and there
is more than one signature listed. Is there any way to create a shortcut key
that will choose the first signature on the list, or is a multi-item menu not
accesible by a shortcut key combo?

That's the problem, our versions of Outlook and Word are a mismatch and we
are unable to use Word as our Outlook editor.
