I made my main yahoo acct. and my other three email accounts but now when I
start Outlook 2003, all but my main acct. shows the name I gave it. The main
acct. shows up as Outlook.

You can change the account names in your account settings. You cannot change
a profile name. You can copy it so you can assign it another name but in
some cases this could lead to other problems. In that case you'll need to
recreate your mail profile;
