How do I change the name shown when selecting the email address from the address book

I have Microsoft Outlook 2003. When I send an email I select the "To" prompt and the address book appears. When I select who I want to send the email to it displays the name then the full email address. How do I get it to just show the name only, apart from going through and altering every one individually?
