I changed email providers. However, in word the old provider keeps coming up
with an out of date address book. Is there a way to change this to my new
provider?

Word doesn't use an 'e-mail provider'. Email is a function of your email
software and address books are a function of Outlook. Setup your new
provider as your default e-mail account in your email application and setup
your contacts in Outlook.
