How do I change from double spacing and make it my default?

This is driving me crazy! I have searched and tried all the suggestions I've
read, but I still have to change paragraph spacing from Auto to 0 EVERY time
I create an email message.

At no time have I ever been able to check the "Don't add space..." box
because it remains dimmed. I've gone through Styles & Formatting, changing
it to Normal, but that has not worked. I've gone through Options and Mail
Format and that doesn't work, either.

Has someone figured out how to make single spacing their default and made it
stick?
