How do I change the default font styles in outlook 2003?

Can I change the default font styles in Outlook 2003 (i.e. those that appear
in Format > Style)? The problem I am really trying to solve is that there
appears to be a default font size in my Outlook messages (usually Arial 12
pt) but my font size is supposed to be Verdana 10 pt. Is there something in
Outlook, IE or even Word that is going to be affecting a default font size in
my email messages?
This happens normally when I am doing lots of editing in an email message. I
wondered if my editing is deleting some vital style or html instruction?
I am editing in Outlook, not Word, and sending HTML emails.
Any ideas?
