How do I change a category of one part of a recuring event?

I use outlook to keep my rehearsal schedule up to date. If I have a category
for music rehearsals that repeat (blue) and if one of the rehearsals is
cancelled, how can I change the category to another color that means
cancelled (grey) and not change the category color for the rest of the
rehearsals. I could do this in 2003 with the labels feature but can't figure
it out in 2007.

Works the same way; double click to open the recurring appointment. You'll
be asked if you want to modify this occurrence or the entire series. Choose
this occurrence.
