I want to find out how to create a rule to automatically forward email from
specific email senders to another email address.

Tools>Rules and Alerts. It's quite straight-forward.

The hard part is forwarding only legitimate mail without forwarding spam.
There is no exception to not forward mail identified as spam or junk mail so
whoever you forward your mail to is going to get all your mail, even the mail
that your outlook identified as spam and sent to your junk folder. Although
Microsoft was smart enough to figure out a rule to forward mail, it wasn't
smart enough to create and exception for mail sent to your spam folder.

In Outlook 2003/2007, the Junk E-mail filter runs prior to any rules so you
won't be forwarding junk.

Outlook doesn't have a "Spam" folder. If you see one, it's being added by a
third-party program.

I wish that were true but it's not. All the mail goes to my assistant, even
stuff that goes to my junk folder.

system to an address an a separate system of from a service provider like
Yahoo. I have tried to set up a rule, but without success. Any suggestions?

By default Exchange does not allow autoforwarding to external addresses.
Perhaps that's why it doesn't work for you. Speak with the Exchanfge admin.
