You'll still have to edit each one manually, but you could speed things up
just a *little* for yourself if you use a table view (e.g. PhoneList) and add
the Email Display As field to the view. You'll also need the "Allow in-cell
editing" setting to be checked in the Other Settings for the view. That will
allow you to make changes in a list without having to open each item.
