What is the difference between Display Name and STMP Address?

Rachel,

The "SMTP address" is your e-mail address. More specifically, it's your
e-mail address expressed as a <mailbox name>@<domain name>. (Prior to SMTP,
e-mail addresses, and other resources, were expressed as a string of host
names separated by "|"s followed by your mailbox name. This explicitly
denoted a path across the Internet.

"Display name" is whatever you want to be displayed preceding your e-mail
address in the recipient's e-mail client software. As I'm sure you know,
people usually use their full name. The vain among us will seize the
opportunity to include "Sir" once they've been knighted by the Queen of
England.
