You can use Signatures for that;
Tools-> Options-> tab Mail Format-> button Signatures...
If you are actually using Windows Mail and not Outlook, use;
Tools-> Options-> tab Signatures
Press the ALT button on your keyboard if you don't see the Tools menu.
