All of our server use raid 5 controllers and I have
noticed severe fragmentation. Is it recommended to still
use a disk defrag program even with a raid 5 controller?

Also is it recommended to defrag a NAS server?

Yes (RAID5).
Yes (NAS), if the NAS supports it (check w/your OEM).

Depending on the usage patterns fragmentation can impact perf 5-->15%.

Since RAID5/NAS implies a large image size, I would recommend scheduling the
defrag to run during light usage (users can still be on the box, but perf
will be down during the job).
