How can I type the first letter of the contact in the address box of an
outgoing e mail and have all my contacts with the same beginning character
appear automatically in a drop down box?

You can't because on those versions of Outlook that have that feature (and
you don't say what version you are using), it's not connected to contacts in
any way whatsoever.

You can't. That is a cache of addresses which you used before. Press CTRL+K
or Check Names instead.
