I need to be able to dim text when I click on it, but not in the set order
that's available with custom animation settings. Is this available with
another feature, such as action settings?

In powerpoint xp/2002 and above, you can use Empahsis effect > transparency
to dim the text. After you set the transparency on the textbox, the
transparency effect will appear in the effect list (the box that shows all
the effects you have added).
In the list, there is an arrow for you to press, which will show all lines
within the textbox.
Change all of them to "On Click", click and drag them to re-order the
sequence. There is also a Re-Order feature below the effect list.

If you have PPT 2002 or higher you can use animation triggers and an emphasis
effect.

I've tried doing this with triggers (a new feature for me!) but essentially
it goes in the order that is programmed.

Here's what I have: a slide with 7 words on it. I want my user to be able
to click on one of the words - whichever word s/he chooses - and then dim
after clicking.
The next user would then click a word and it would dim. The words aren't in
a list; they are each in their own text box.

Can I make this text dim without an order?

First insert each text item as a separate text box. So you should have 7
text boxes with a different word in each.

Click on Slide Show, Custom Animations
Remove all the existing animations
Click on the text to be animated
Click on Add Effect in the Custom Animation pane
Choose Emphasis, More Effects
Choose Change Font Color
Set the font color to whatever you want it to be (See Font Color: drop down)
Set the Speed to Very Fast
Double Click on the first text animation
Click on the Timing Tab
Click on the Triggers Button
Click on the Radio Button for Start effect on click of:
Choose the Text box with the same text

Repeat for the remaining text boxes.

There just must not be a way to animate without sequence. I did all of these
steps and it works great! If only I wanted the text to fade out in a
particular order. Since I don't want there to be a sequencial order I'm
going to work around this problem.

I left this alone for a couple of hours and came back to it. I used your
directions EXACTLY and it worked!!! I was putting the trigger on before
changing the font color on all of them.
