Hi, does anyone know how / whether you can deselect once you've selected a
Checkbox option? If so, how?

yes they are designed as "toggle" boxes click it to check it, click it again
to un-check it.

If you're talking about radio buttons, these are different in that only one
option with a "group" of buttons

eg the group name might be "Car" but the options under that group is say
Toyota, BMW, Jaguar etc
think radio button - single choice at one time, check boxes, multiple
options can be chosen.
