When I want to send a message i select "new" and type in the first part of a
name; Outlook brings up a number of names, including what I want, but also
ones that were incorrectly types or that I want to delete. There is no way
of deleting them in the options. How can i delete addresses from that list?

Try using your down arrow key to highlight the address you want to delete.
Then hit the Delete key.
