how do you delete some items in your task bar?

You would need to uninstall the programs associated with those items or set
the program options to not have a taskbar icon as some programs allow. In
Windows XP you can hide them if you just don't want to see them but they
are still neccessary for something (Propreties of the Taksbar, then choose
the Customize button).
