I have a user that gets 100's of emails everyday. We've just migrated from
Notes and there use to be a option to delete all unread mails that are 60
days or older. Is there anything similar in Outlook. A lot of this email he
doesn't always need to read. I tried creating a custom search but cant find
anything there. Any ideas? we are on outlook 2007

You can "delete" everything older than 60 days.

You can setup AutoArchive for that;
Tools-> Options-> tab Other-> button AutoArchive...

If you are using Exchange, then you could also use Managed Folders instead
to have more server-side control over it.
