Somehow I accidentally deleted my entire SPAM folder box (over on the left
hand side in the Mail section of Outlook) so now I can't check for emails
that have erroneously been dumped there. I have checked the Help box for
answers but none seem to explain how to restore that to the column of boxes
(ie Inbox, Junk Mail, Sent, Draft, etc) Any ideas?

Is it in the deleted items folder? Go to the folder list (Ctrl+6) and look
for it.
