Every day, my sent mails are deleted from Outlook for the previous day.
How do I resolve that problem?

Hard to say with this level of information. My guess is that you either have
a filter applied to your view or AutoArchive enabled for that folder.

How would I tell if I had a filter on? Guess I am not as savvy as some.

In Outlook 2007 you can go to Tools/Options, and then the 'Other' tab.

The first checkbox says: "Empty the Deleted Items folder upon exiting".
Make sure that is UNchecked.

That option has no relation to the Sent Items folder.

Depends on your version of Outlook which you still didn't post. In general
in the left bottom corner on the status bar it would say "Filter Applied".
