delete sold item from page?

Is there a way to put single items in a store page using paypal payments
where the item is either flagged as sold or deleted when the transaction is
successful?

Yes, but requires server-side scripting and a database to drive the store content and then be able
to get feedback from the PayPal system to update your local database on the item's status, etc.

So . . what about setting up an 'e-mail notification' when the buy it button
is clicked?

Is there an easy way to do that?

You would have to talk with PayPal, since you are using their Buy button / script. In general you
will get an email from PayPal for each purchase made.

You will get a notification that you sold a particular item, and if has been funded...you could just react upon recieving that email. That's how I handle it...but I don't have a lot of sales :-(
