I want to delete only unread messages in my delete file and keep the rest.
Can I do this?

If you put an email into your deleted items folder, why would you want to
then keep it?

Hmm, very helpful...

Right-click on the one of the fields. In the field chooser you should
be able to see a "Read" tab. Add this to the Fields. You should then be
able to arrange everything by this field and delete what you don't want.
