How to delete a name in to area of new mail

Help. No one knows how to delete an address ( name) in the "to" part of new
mail. Old ones, I don't need. Can't see HOW to delete them so they don't pop
up when ie. I type a B and all my B emails pop up. I don't want some as they
are old,etc. S

When the list pops-up select the name you don't want with your arrow keys
and press DELETE.
