How do you delete IMAP mail in Outlook when you no longer have access to the
IMAP server and can't purge the mail? (I set up a internet account on a
cruise ship to retrieve mail in outlook 07. Now I can't delete the mail I
received using that connection.) Any help would be appreciated.

Open the Mail applet in Control Pane and remove the IMAP account from the mail
profile.

There isn't an IMAP account listed. Just the POP email account used normally.

If there's no IMAP account then there should be no way to receive anything
from that account. Nonetheless, start with a new mail profile. That should
cure the problem.
