How to delete in mail/address ie. Sara Smith name

Want to know how to get rid of an old address I don't need. ie. Under New
mail, click on A and all my A's come up. Want to delete one of them.

Make the name appear in the To... field, then use the down arrow of your
keyboard to highlight the one you want to delete, hit delete on the
keyboard.

What you are asking by the way is "how do a remove a name from the
autocompletion cache". This is asked and asnwered here very often but it's
rare that people know what that drop down name remembering thingy is called.
