With Windows Defender Beta2 now released, will there be definition updates
available for the Beta1 users who do not wish to update to Beta2 at this time?

Nothing's been posted about that, I'm afraid. I suspect that they will
continue to be available for the duration of the life of beta1--i.e. til the
expiration date--but I'm guessing.
