How can I define the view for new folders that I create? Specifically, I
want to turn off the Reading Pane and turn on the Auto Preview for new
folders.

New mail folders will always use the "Messages" view, so modifying that view
should do what you want. View>Arrange By>Current View>Define Views. Select
