I am using the "classic" option and would like to have control over what name appears in the "account" field after I boot up.

You have to CREATE a user under Control Panel and can name that anything you
wish.
Make sure you give it Admin rights if it's the only login you wish to use.
Then you can delete the user that's already set up but first:
Windows Explorer
Navigate to C:\documents and settings\{username}\start menu\
and drag any shotcuts under this folder and it's subfolders to
\{newusername}\start menu\
If you don't you will have to create the Short cuts all over again.
