How do get a default form field value to be the current date/time?

You would either use JavaScript (Client-side) or ASP, ASP.Net or PHP (Server-side)

Through JavaScript you can call a function when the page is loaded to fill
out a particular form field automatically, though you'll probably have to
toy with the script a bit to get it to do exactly what you want. There are
lots of great scripts out there though, try javascript.internet.com and
www.dynamicdrive.com
