I just installed MSOffice 2007 which includes Outlook 2007. I cannot find a
way to set a default font/size/color so that when I click on NEW message or
REPLY, Outlook will use the choices I make. It seems I have to set each
message separately.

Tools->options->mail format tab->stationery and fonts.
