Default Currency

Although my Regional Currency is set to English £, Excel doesn't appear to be
able to 'see' it, so when I click on the currency button all I get is '$'.
Changing 'Style' in 'Format' only produces '£' for that particular worksheet
at the time, open up another worksheet and your back to square one.
How can I 'default' the currency to '£'?
