I have several accounts I use for sending email. I would like to create a
different default for each one that would be automatic. I only see an option
to set 1 account for sending. If you want to change you have to click on the
account button below the send button and manually change it. Has anyone
found a way to create an auto default for each account?

You can only have one default account.
