I want to enter all day events and no show a start or end time. I can't
recall how to do this. I want to enter a three day event that is noy only
showing as one day. For instance vacation from the 22nd until the 28th.

Make sure you check the "All day event" check box and it should appear as you
want. Start it on the first day and set the ending date for the last dayl.
