How can I lock the Data Time Setup function on Pocket PC via my PPC app? Or
How can I remove the Data Time Setup function? I don't want the user to
modify the Date Time on Pocket PC!

Build a custom image. It's not your device to want or not want user to be
able to do something

The best I can think of is to write an app registered with CeRunAppAtEvent
so it runs on a time or timezone change that changes the time back to the
current time if a user modifies it.
