Would like to only have mail dating back 1 or 2 weeks prior to the current
date. This rule does not appear among the others. Can a script be created
for the option? Please advise

There doesn't seem to be any rule you can use. You can periodically do an
Edit | Find and then specify the date range and then you can then delete the
results for that date range.
